2019 Dormilona House Pet, Margaret River

Grenache sourced from the dry-grown Burnside vineyard in Wallcliffe was used for this stunning single vineyard pét-nat. Grapes were hand harvested, whole-bunch pressed to tank and naturally fermented before being transferred to bottle with a little sugar for a bright, sparkling bubble.

2019 Gilbert Rosé Pétillant-Naturel, Mudgee

Crafted from 100% sangiovese grown at the Gilbert family’s Mudgee vineyard at an altitude of 520 metres, this bright pink pét-nat shows watermelon-like aromas and flavours, wonderful texture and a fine bead.

2018 Corymbia Chenin Blanc, Swan Valley

This modern interpretation of chenin blanc expresses the qualities of the Swan Valley region that winemaker Rob Mann’s family has admired for over 100 years. The wine shows distinctive characters of beeswax, beurre bosc pear and oyster shell with a long and vibrant saline finish.

2019 Golden Child Island Life Fumé Blanc, Adelaide Hills

A contemporary take on Adelaide Hills sauvignon blanc, this wine was fermented with wild yeasts and spent five months on lees. Fine, crisp and textural with flavours of citrus and stone fruits underpinned by cucumber, honeysuckle and white flower notes.

2018 Murdoch Hill The Tilbury Chardonnay, Adelaide Hills

This chardonnay shows lifted aromas of lime and flowers with nutty, wet-stone complexities. Citrus, green apple and grapefruit flavours drive the palate with a mineral textural element supported by lively acidity and great structure.

This modern take on Hunter semillon was fermented on solids in tank and neutral oak, with extended time on lees to build complexity. It shows the character of the Somerset vineyard’s old, gnarled vines, balancing fruit and minerality.

2019 Yangarra Estate Vineyard Blanc, McLaren Vale

This Australian first, Châteauneuf-du-Pape-inspired blend of grenache blanc, roussanne, clairette, piquepoul and bourboulenc saw fermentation in ceramic eggs with no added acid or sulphur. The wine showcases the fresh, crunchy style these varieties are renowned for.

Teroldego is native to Trentino-Alto Adige in Italy’s north east but it has found a home in Yallingup in Margaret River. This version is dense, brooding and structured with acid, tannins and fruit in perfect balance.

2019 Two Tonne Tasmania Ziggurat Pinot Noir, Tasmania

Crafted from several parcels of Tamar Valley pinot, half of this wine saw 100% whole-bunch carbonic maceration, with the other half destemmed and whole-berry fermented. It was matured in older oak and bottled without fining or filtration.

2018 Samuel’s Gorge Graciano, McLaren Vale

The Samuel’s Gorge graciano vines yield few bunches but the fruit is exquisite, and the variety is as at home in McLaren Vale as it is in its native Rioja. Heady aromas of dark fruits and Sichuan spice lead to a structured palate with bright, vibrant acidity.
