At this dinner, seven top examples of Australian fizz will be put up against 10 stunning international styles, including Champagne, Cava and Crémant D'Alsace, showcasing a range of terroir and grape varieties across 14 exceptional producers.

2015 Bird in Hand Nest Egg Joy Sparkling Pinot Noir,
Adelaide Hills

Crafted from Bird in Hand’s finest parcel of pinot noir, this richly flavoured methodé champenoise shows strawberry and brioche flavours with blood orange and red berry florals.

NV Clover Hill Cuvée Rosé, Tasmania

Stewed strawberry and dark cherry notes mingle perfectly with fresh brioche characters. A fresh, vibrant and well-structured wine with a soft and creamy mousse.

2013 Clover Hill Vintage Brut, Tasmania

Aromas of citrus and red berries are carried by hints of toasted brioche. The palate is delicate and creamy, driven by natural acidity derived from an extended growing season.

2014 De Salis Blanc de Blanc, Orange

Aromas of oyster, lemon peel and freshly whipped cream lead to a complex palate of nashi pear and grapefruit flavours with underlying salinity and a fine, talc-like mineral finish.

2014 De Salis Rosé, Orange

This wine exhibits aromas of wild strawberry and high-top bread crust. The palate is complex with a soft, fine bead, a long line of acid and lingering blood orange flavours.

MD (Multi-vintage mature disgorged) Henschke Johanne Ida Selma Blanc de Noir, Adelaide Hills

Elegant aromas of apple and citrus blossom, complemented by plum skin, redcurrant, ginger and wet slate. The palate is rich, complex and concentrated with layers of texture and bright acidity.

NV Josef Chromy Cuvée, Tasmania

A blend of pinot noir, chardonnay and pinot meunier, showing aromas of crisp green apple and citrus. The palate is fresh and lively with green apple and lemon and a hint of toasted biscuit.

NV Ayala Brut Majeur, Champagne

A blend of 40% chardonnay, 40% pinot noir and 20% pinot meunier, Ayala Brut Majeur is the epitome of a non-vintage brut from a great, historic house.

NV Boll & Cie Blanc de Blancs, Champagne

This bright, clean Champagne shows exceptional freshness with mineral notes underpinned by citrus and straw flavours and pleasant, mouth-watering acidity. An amazingly food-friendly wine.  

NV Segura Viudas Reserva Heredad Cava, Penedes

A blend of 67% macabeo and 33% parellada, showing complex aromas with notes of biscuit, honey, fruit and flowers. The palate is elegant, full flavoured and incredibly refreshing.

NV Henriot Blanc de Blancs, Champagne

Aged for five years prior to release. Aromas of honeysuckle and orange blossom are interwoven with lime flower leading to a lively, generous palate with fresh lemon flavours dissolving into notes of butter-laced brioche, quince paste and acacia honey.

NV Henriot Rosé, Champagne

Aged for three years prior to release. Red and dark berry fruit aromas are supported by notes of lemon, pink grapefruit and mandarin. The palate is persistent with floral and savoury flavours making way for spicy notes and lingering sweetness.

NV Joseph Cattin Crémant Brut, Alsace

Crafted from hand-harvested pinot blanc and auxerrois, this crémant d’Alsace shows fresh aromas of green apple and white flowers. The palate is crisp and dry with lively acidity and a fine, creamy mousse.  

NV La Baume Sparkling Chardonnay, Languedoc

Expressive aromatic notes of peach, nectarine and florals lead to a mouth-filling palate with flavours of candied citrus. A wine of great length and balance with classic chardonnay minerality.

2015 Lallier R015, Champagne

Aromas of vine peach, ripe pear and hazelnut lead to a bright, opulent palate showcasing great balance with a tightly wound mineral character on the finish.

2012 Pol Roger Blanc de Blancs, Champagne

Dried fruit and hazelnut aromas combine harmoniously with notes of citrus and exotic fruits. This vintage blanc de blancs’ palate is incisive yet elegant with fresh notes of citrus underpinned by a bright acidity.

2008 Collet Millésime, Champagne

A blend of 10 Premier and Grand Cru villages, 50% pinot noir, 40% chardonnay and 10% pinot meunier, this wine has aromas of lemon, quince, brioche, acacia and fresh verbena. The palate is mineral, clean and saline, full of pure, delicate flavours of grape, set against a citrus backdrop.
