BEEF CHEEK TACOS


wine pairing: 2018 Tyrrell’s Old Hillside Shiraz, Hunter Valley, A$70

Hailed as Australia’s number one grape variety, there’s a broad range of shiraz and syrah from which to choose. When picking the right style to pair with food, the trick is to match the weight and complexity of the dish with the weight and complexity of the wine. In this case, a medium-bodied, cool climate, peppery shiraz will work well with the spicy flavours in the beef. From an iconic producer, the Tyrrell’s Old Hillside Shiraz is pleasingly aromatic, with plush red and black fruit on the palate, tempered with a fine vein of refreshing acidity.

Duck and Orange Carnitas

In general, Mexican food demands wines that aren’t fazed by a hit of chili and spice. When it comes to duck, pinot noir is traditionally the go-to wine, but in recent times, Australian grenache has really hit its straps and makes for an ideal match for this delicious Mexican version of Duck à l'Orange. Teusner’s juicy, aromatic drop – with its touch of spice and crisp acidity – happily complements the rich flavours of the duck in this spice-laden sauce as well as the extra tang of the citrus salsa. Serve this easy-drinking wine slightly chilled for the best result.

SCALLOP TACOS


WINE PAIRING: 2019 Thomas Wines Two of a Kind Semillon Sauvignon Blanc, Hunter Valley, A$23

Chardonnay is normally considered the perfect partner for grilled scallops, but not when chili is added to the equation. A fresh sauvignon blanc, with herbal and cut grass flavours, works well with salads, seafood and spicy dishes, but when combined with semillon, it can take on more complex dishes. This citrus-driven wine from Thomas is a unique blend of Hunter Valley semillon and Adelaide Hills sauvignon blanc, which will marry well with both the scallops, the sweetness of the corn and the chili hit.
