Talking About Tilde

Australia has entered the chat, the vodka chat that is, with the launch of the nation’s first raw vodka – Tilde. The collaboration of Sydney’s Door Knock bartender Natalie Ng, White Rabbit brewer Jeremy Halse and Joadja   Distillery distiller Valero Jimenez, Tilde is crafted from 100% local ingredients using low-intervention distilling and minimal filtration. 

“Sipping neat, you’ll taste a balance of subtle aniseed and citrusy notes, a hint of fresh lemon peel,” says Ng. “Tilde is here to shake up perceptions of all vodka being boring and predictable; this is a liquid of quality taste and personality.”

Lotus Lands in the Inner West

Inner Westies of Sydney, your new go-to for mouth-watering dumplings is here, with Lotus Dumpling Bar opening in Summer Hill. Known for their venues across Sydney, Lotus will serve up their signature dumplings and flavoursome share plates at the new haunt.

Beverage Manager Matthew Stewart has crafted a list full of local and international wines, along with fun cocktails and a large selection of beers. Riesling fans are in for a treat with the venue also hosting its own dedicated Riesling Bar.

Hello to Hubert Estate 

here’s a new destination to pop on the itinerary of your next Yarra Valley getaway, with the opening of St Huberts. A ‘destination’ is the key word here, with the estate not only home to the St Huberts Cellar Door, but also to Modern Australian and European-influenced restaurant Quarters @ Hubert; the Hubert Gallery of Art; picturesque event space Harriett and boutique wine store Notes. It’s a beautiful spot to spend a day. The estate’s design was led by Cera Stribley and Landini Associates who have created a warm, chic atmosphere in the heart of Victorian wine country. There’s more to come too, with plans to open a hotel and wellness centre by 2024.

Keeping it All (Saints) in the Family

Rutherglen’s All Saints Estate is opening its Family Cellar ahead of the inaugural Museum Release this June. Launched in 2003, the Brown Family developed the cellar to house their most special wines and now in 2022, they will be offering up some highly sought-after bottles. Some of the wines include the 2004 All Saints Estate Family Cellar Shiraz, 2007 All Saints Estate Family Cellar Marsanne; limited releases of the shiraz muscadet blend Alias II; and the Bordeaux-inspired blend named after the Brown’s late father Peter, called Pierre. Winemaker Nick Brown has hand-selected the wines, which will feature 2008 and 2013 vintages, and will be available to buy individually or as part of curated packs showcasing variety or vintage.

Mac's Latest

Mac Forbes has released its much-anticipated 2020 Single Vineyard range. The Yarra Valley winery has been producing the range annually since 2005, and 2020 is the first vintage where the focus is on wines sourced from its own sites. The team manage the land using regenerative agriculture practices.

The 2020 range includes the Little Yarra Chardonnay and Pinor Noir from Gladysdale in the southern Yarra; Spear Gully Chardonnay from the Upper Yarra’s Hoddles Creek; and the Ferguson Chardonnay and Pinot Noir from Woori Yallock.

Taste of Greece with Topikós

Recently opened on Sydney’s iconic Bondi Beach is Greek bar and dining room, Topikós. Designed by interior stylist Anna Hewett, the light and modern space transports you right to coastal Greece, with marble mosaics and beachy blue hues.

The all-star team behind the new venue includes culinary director Joel Bickford; chefs Danny Corbett and Charles Woodward; food and beverage director Alex Kirkwood; and restaurant manager Nick Ingall (The Apollo, Greca). The 100-seat bar sits adjacent to the 80-seat Dining Room, offering patrons the choice between a casual drink at the bar, a more luxurious dining experience in the restaurant, or a combination of both.
