LA LUNE WINE CO, SOUTH BRISBANE
“What I love most about working in wine is the interaction you get with people. Wine seems to be the thing that pulls us all together,” says Bailee Dewes of South Brisbane’s La Lune Wine Co. “I love to introduce my favourite wines to guests, or ones that they haven’t tried or heard of before. It’s really gratifying.”
Dewes is behind the list at La Lune Wine Co, a bar that puts wine first and foremost.
“At La Lune, we have created a wine bar – with food. Not the other way around,” says Dewes. “We want the wine to be the lead singer, and the food to back up the wine like the bass and drums of the band.”
The food is modern Australian with a hint of French influence. Expect to see baked mussels, kangaroo tartare, rabbit pastie and confit duck, or tuck into a paired tasting menu to see Dewes’ talent in full swing.
So what’s Dewes’ favourite pairing at La Lune at the moment?
“I am loving the 2020 Ngeringa Pinot Noir paired with our taleggio risotto with black pepper and chive oil,” she says. “The lovely herbal notes and acidity of the pinot noir cuts through the cheese to work so well.” But at home, Dewes has a favourite.
“I am obsessed with pasta and pinot noir,” she says. “It’s usually a saucy, tomato pasta and lately I’ve been drinking pinot from Onannon Wines in the Mornington Peninsula.”
