Stillwater SEVEN

The latest evolutionary phase of Launceston’s critically-acclaimed Stillwater restaurant was announced in March, with the addition of seven ultra-modern, luxuriously appointed waterfront rooms to the renowned eatery’s offerings. Housed in an historic mill that once provided water and flour to Tasmania’s early European settlers, Stillwater SEVEN is a project two years in the making and gives a nod to both the building’s history and Tasmania’s unmatched reputation for boutique food, wine, art and accommodation.

“We’ll offer the same caring, nurturing and professional service Stillwater is renowned for – all the way to pillow plumping before bed,” says hotelier Chris McNally. “The seven boutique rooms will be infused with the foodie experience Stillwater is known for.”
