Champagne History

When Champagne Palmer & Co bought Domaine du Chalet in October last year, they also bought a piece of history – the estate, built in 1860 just outside the little village of Chigny-les-Roses, was once the home of Louise Pommery, heir to the Champagne Pommery fortune.

Now, Palmer & Co are writing their own piece of history, creating a unique gastronomic, oenological and relaxing experience. Guests at the estate have the choice of four suites inside the main residence, or another suite in a luxury tree house perched 10 metres off the ground in the branches of a red beech tree. The Champagne house has also brought in chef Damien Litaudon, who has been working closely with Palmer & Co's cellar master, Xavier Berdin, to create the perfect food and Champagne matches.
