A plane trip with a distiller from Scotland and access to indigenous ingredients on his family farm led Eddie Brooks to create Cape Byron Distillery and two gins: Brookie's Byron Dry Gin and Brookie's Byron Slow Gin. The Dry Gin (A$75/750ml) is distilled with botanicals found in the regenerated rainforest on the Brooks’ macadamia farm, including native ginger, finger limes, aniseed myrtle and, of course, macadamia nuts. Davidson plum is the backbone of the Slow Gin (A$65/750ml). Later in the year a distillate containing macadamias and lemon myrtle will be released.
